We eat a lot of fajitas at home and absolutely LOVE them.  It's one of the rare meals that Dustin and I both very much enjoy when ordering at restaurants.

Unfortunately, most chicken fajitas are loaded with added oil and salt and then wrapped in refined flour tortillas.

Plus, I don't want to go out to dinner every time the fajita craving hits—because it hits a lot.

Enter this Meal Prep Healthy Chicken Fajitas.

I especially love that I can make one of our favorite dishes ahead of time and then just grab it from the fridge and have a home-cooked, delicious, and healthy dinner or lunch in a matter of minutes.

Watch How To Make Chicken Fajitas Meal Prep

If you’re new to meal prep, this is a great recipe to get you started. I mean, you are having FAJITAS for dinner.

FAJITAS!

Meal prep really helped me get on the healthy, clean eating path.  Planning just makes everything so much easier, especially when you’re just starting out.

Ingredient Notes

Chicken: You really can’t go wrong with chicken. It’s simple to season, fairly quick to cook, and good for you! 

For these healthy chicken fajitas I use chicken breast but chicken thighs are also a good option when if you’re planning to meal prep chicken.

Thankfully, being low in calories and fat does not mean it’s lacking in flavor.  To add additional zest, try out different marinades to infuse your chicken with flavor.

Bell Peppers: I use a mixture of red and green bell peppers for this recipe. You can pick whichever ones you prefer and they will go great. Often times I just get a pack from Costco that has a variety of green, red, orange, or yellow. If you hate bell peppers, you can always replace them with additional onion, which is what Dustin does.

Beans: For the beans, I use low-sodium black beans. They are some of my favorites, although you could make beans however you want, and it would go with this great. Again, if you don't care for beans, you can leave this part out. I have also used my instant pot black beans, which are delicious.

What Are The Best Tortillas To Go With This?

Who doesn’t love tortillas, am I right? My favorite store-bought tortillas are Siete Cassava Flour Tortillas, which you can find in the refrigerated section of most grocery stores.

Or you can put in a little extra effort and follow one of my easy homemade tortilla recipes, like any of these:

How Long Can You Keep Chicken Fajitas In The Fridge?

You can store these SEVEN meals in the fridge in an airtight container for up to 5-7 days. 

How To Store Chicken Fajita Meal Prep

I use these glass meal prep containers to keep my food fresh and safe, but any airtight containers will work.  When you’re ready to enjoy your meal, just reheat it in the microwave for 2 minutes and you’re good to go.

Ingredients
  

For The Fajita Chicken:

  • ⅓ cup lime juice, (approx. 2-3 limes)
  • ¼ cup pineapple juice, no sugar added
  • 2 tablespoon low sodium soy sauce
  • 1 clove garlic, minced
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • ½ tsp. red pepper flakes
  • 1 tsp. sea salt
  • ½ tsp. ground black pepper
  • ¼ cup cilantro chopped
  • 2 tbsp. olive oil
  • 4 6-8 oz. boneless, skinless chicken breasts

For the Fajita Bell Peppers:

  • 1 white onion, thinly sliced
  • 1 poblano chile, thinly sliced
  • 2 red bell peppers, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 tsp. sea salt
  • ½ tsp. ground black pepper
  • ¼ teaspoon garlic powder

For the Lime & Cilantro Black Beans:

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • ½ jalapeño, (1 tbsp) seeded and finely diced
  • ½ teaspoon cumin
  • 2 15- ounce cans low sodium black beans, rinsed and drained
  • 1 cup low-sodium chicken broth
  • 2 tablespoon fresh lime juice
  • 2 tablespoon fresh cilantro, chopped
  • 1 tsp. sea salt

Instructions
 

To Make The Fajita Chicken:

  • In a large bowl or ziplock bag, combine the chicken breast with freshly squeezed lime juice, no sugar added pineapple juice, low sodium soy sauce, olive oil, minced garlic, ground cumin, smoked paprika, red pepper flakes, sea salt, ground black pepper, and chopped fresh cilantro.
  • Place in the fridge for a minimum of 30 minutes, up to 8 hours.
  • Once the chicken is marinated, heat 1 tbsp. olive oil over medium-high heat in a large skillet until hot.
  • Add the marinated chicken, cooking on both sides until cooked through, about 4-6 minutes per side.
  • Remove the chicken from the pan and set aside to rest. Slice into thin slices.

To Make the Fajita Bell Peppers:

  • In the same pan used to cook the chicken, add sliced white onion, sliced poblano pepper, sliced red bell peppers, sliced green bell pepper, sea salt, and ground black pepper, and toss to combine.
  • Cook over medium-high heat until the bell peppers and onion are tender, about 4-6 minutes.

To Make the Black Beans:

  • Heat oil in large saucepan over medium-high heat.
  • Add garlic, jalapeño, and cumin and cook for 1 minute, or until garlic is fragrant.
  • Add the beans and broth and cook 5 minutes, stirring occasionally.
  • Coarsely mash beans with a potato masher.
  • Continue to cook at a simmer for about 8-10 minutes until the mixture is thick, stirring frequently.
  • Add in lime juice, cilantro, and sea salt, to taste.
  • To assemble the chicken fajita meal prep, start by adding the cilantro lime black beans to your meal prep container, followed by the sliced fajita chicken, and the bell pepper and onion mixture.

For the macros, I have portioned out this meal into 6 equal servings, which is what I call "1 meal" for serving size.

      The entire meal prep can be divided into 6 servings, which I place into 6 meal prep containers. This is what I have calculated as 1 serving.

    I have to count everything I eat, and knowing the calories is perfect, but I have to know how much is one serving. Is that stated somewhere or would you be able to tell me? Thank you so much I’m gonna try to make this tonight and I’m really looking forward to it!

      If you divide the entire portion out into 6 meals, that is the serving size.

    What is the actual serving size for this "1 meal"? How many grams of beans, chicken and peppers are in your calorie count?

      I'm sorry, I do not have the exact amounts in grams for each portion, but all the ingredients, divided into 6 meals is how I calculate the serving size.

      Sorry for the confusion - it now reads 4 6-8 oz. chicken breasts....basically you're looking for 4 medium/large chicken breasts.

      Where do I say 24? That is by no means correct and I can update that if it's in the post somewhere ?? I've never tried freezing it, but it should mostly freeze well, just the bell peppers won't have the same texture once thawed.
