Thyme Roasted Carrots

This healthy 5 ingredient Thyme Roasted Carrots recipe goes well just about anything and is my favorite way to make roasted carrots. The perfect easy veggie side!

I'm re-sharing one of my favorite easy side recipes today.  I certainly make these thyme-roasted carrots -- and eat them -- like all the time since they're so easy and so yummy.  So...why not update the photos and add a lil' video to show you just how easy they are, right?

This is a super easy veggie side to make that goes well with a lot of different types of meals.  I particularly like thyme-roasted carrots with turkey, chicken, steak and tri-tip.  The sweet and salty flavors and soft texture of the carrots complement those meats quite nicely.

I’ve also been known to enjoy these yummy carrots as a light and healthy main dish, too.

How To Make Roasted Carrots

The most common questions I get asked about this thyme roasted carrots recipe are: “Do I have to boil carrots before roasting them?” and “Do you need to peel carrots before roasting them?”

The answer: nope and nope.

This side is super easy and requires absolutely no prepping for. All you need is (1) carrots, (2) fresh thyme, (3) sea salt and (4) ground black pepper.  Then roast the carrots in the oven for 30 minutes and you’re done.

Serious.  Told you it was easy!

Why You Should Totally Make Roasted Carrots

Making roasted carrots is one of the easiest side recipes you'll make because it doesn't require a ton of ingredients and the prep and clean-up are both very simple.

Roasting carrots brings out their natural sweetness, so not many additional seasonings are needed.  If you feel like it, however, you could add a splash of balsamic vinegar, raw honey, or some sprigs of fresh rosemary to the carrots.

Personally, I like them nice and simple. They're the perfect side for homemade roast beef, too.

This recipe also happens to be vegan as written, if you're following a vegan diet.

Just be sure to use carrots that are all roughly the same size and shape.  This will make roasting much easier as the carrots will cook more evenly.  That means no partially cooked carrots while others are overcooked.  Instead, it will be roasted carrot perfection.

Equipment

  • Rimmed Baking Sheet

Ingredients
  

  • 10-12 whole unpeeled carrots, split lengthwise
  • 2 tablespoon fresh whole thyme leaves, no stems
  • 2 tablespoon olive oil
  • 1 teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Preheat oven to 400 degrees.
  • Cover a sheet pan with aluminum foil or parchment paper.
  • Drizzle olive oil over carrots on the sheet pan. Season with salt and ground black pepper. Toss carrots until evenly coated with oil and seasonings. Arrange carrots on sheet pan.
  • Toss fresh thyme leaves over carrots.
  • Roast in oven for 30-35 minutes, until golden and tender.
