Ingredients

For the meatloaf:

  • 1 lb 85/15 ground beef
  • 1/2 cup almond meal
  • 2 tbsp chopped Italian parsley
  • 1/2 cup freshly grated parmesan cheese omit if going dairy-free
  • 1 tsp sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 egg
  • For the glaze:
  • 1/3 cup tomato sauce
  • 2 1/2 tsp coconut sugar
  • 1 1/2 tsp dry mustard

Instructions

  1. Preheat oven to 325 degrees.
  2. Place the ground beef, almond meal, parsley, parmesan, salt, pepper, and egg in a bowl. Combine very lightly with a fork.

  3. Transfer mixture to a 9-inch X 5-inch loaf pan.
  4. In a small mixing bowl, stir together the tomato sauce, dry mustard and coconut sugar for the glaze. Pour the glaze over meatloaf and spread evenly.

  5. Bake until meatloaf reaches 160 degrees on an instant read thermometer, about 1 hour. Let rest 5 minutes before slicing.
