Not only is this Potato Salad cheap and easy to make, but it also makes a ton of food. Plus, it can be served cold, which makes it a perfect side for a barbecue or a picnic.
3lbsred potatoesunpeeled and cut into 1-inch cubes
⅓cupsour cream
⅔cupmayonnaise
2tablespoonyellow mustard
¼cupchopped parsleybasil and thyme
1green onionchopped
2teaspoondill pickle juice
1teaspoonkosher salt
½teaspoonfreshly ground black pepper
Optional add-ins
2ribs celerydiced
½small onionchopped
⅓cuppickleschopped
2hard-boiled eggssliced
½cupblack olives
3strips crumbled bacon
Instructions
Steam (or boil) cubed potatoes in a large pot for approximately 8 to 10 minutes. If a fork slides into the potato cubes easily and without breaking apart the potato, they are done. Immediately remove from heat and let cool for 10 minutes.
Combine the rest of the ingredients and add to cooled potatoes in a large mixing bowl. Gently toss the potatoes with mixture, adding salt and pepper to taste.
