Ingredients

  • 3 cups whole wheat pastry flour
  • 1 tbsp baking powder
  • 1/4 tsp sea salt
  • 2/3 cup dried unsweetened cranberries
  • 2 tsp. orange zest
  • 1 12-oz can Orange Zevia
  • 1 tbsp coconut oil, melted, plus more for greasing loaf pan

Instructions

  1. Preheat oven to 375 degrees F and grease a 9x5 loaf pan with coconut oil.
  2. In a mixing bowl, combine the whole wheat pastry flour, baking powder, sea salt, dried unsweetened cranberries, and orange zest. Stir to combine.
  3. Add the Orange Zevia and melted coconut oil, and mix until just combined. The batter will be thick and lumpy.
  4. Spread the batter into the prepared loaf pan.
  5. Bake in the oven 25-30 minutes, until sides separate from pan and knife in the center comes out clean.
  6. Cool on a cooling rack. Serve warm or at room temperature. Slice into thick slices and enjoy.
