Ingredients

whole wheat pastry flour

uncooked rolled oats

tablespoon
baking powder

ground cinnamon

sea salt

dried cranberries
1
cup
unsweetened almond milk
½
cup
orange juice

egg

tsp.
orange zest

tablespoon
coconut oil,
melted, plus more for greasing loaf pan
Instructions
Preheat oven to 375 degrees F and grease a loaf pan with coconut oil or line with parchment paper.
In a large mixing bowl, combine the whole wheat pastry flour, oats, baking powder, cinnamon, sea salt, and cranberries. Stir to combine.
In a separate mixing bowl, combine the milk, orange juice, one egg, orange zest, and coconut oil.
Add the milk mixture into the flour mixture, and stir to combine. The mixture will be thick and lumpy.
Spread the batter into the prepared
loaf pan
.
Bake in the oven 25-30 minutes, until sides separate from pan and knife in the center comes out clean.
Cool on a
cooling rack
. Serve warm or at room temperature. Slice into thick slices and enjoy.
