This Healthy Apple Crumble is apple and spice goodness, and a good-for-you crumble all rolled into one. With nuts, pepitas, and tasty cinnamon, this is a gluten-free clean eating dessert soon to be your next favorite!
8 cupssliced Granny Smith apples(approx. 7 apples)
½cupcoconut sugarplus more to taste if needed
½fresh lemon zest and juiceplus more to taste if needed
1teaspoonground cinnamon
¼teaspoonground nutmeg
⅛teaspoonsea salt
For the Crumble Topping
1cupalmond flour
⅓cupchopped pecanscan also use walnuts or almonds or a mixture of all 3
¼cuppepitas
1teaspoonground cinnamon
⅛teaspoonsea salt
2tablespoonmelted coconut oilplus more to lightly grease baking dish
Instructions
Preheat the oven to 375 degrees F and lightly grease an 8x13-inch baking pan with coconut oil. Set aside.
In a large mixing bowl, combine the ingredients for the apple filling, including the apples, coconut sugar, lemon zest and juice, ground cinnamon, ground nutmeg, and sea salt. Stir to combine.
Pour the apple mixture into the baking dish, and place into the oven. Cook for 10 minutes, or until the apples begin to soften. While the apples are cooking, prepare the crumble topping.
In a separate mixing bowl, combine the ingredients for the crumble, which include the almond flour, chopped nuts, pepitas, cinnamon, sea salt, and melted coconut oil.
Carefully remove the apples from the oven and top with the crumble topping. Return the crumble to the oven, and bake, uncovered, for an additional 20-25 minutes, or until the topping is golden brown and apple mixture is bubbly.
Remove from the oven and let cool for 5 minutes. Serve warm.
