Healthy Meatloaf

Meatloaf is a classic dish that everyone loves! This Healthy Meatloaf is clean eating and easy to make. Bonus: It’s great for meal prep!

For the meatloaf:

  • 1 lb 85/15 ground beef
  • 1/2 cup almond meal
  • 2 tbsp chopped Italian parsley
  • 1/2 cup freshly grated parmesan cheese omit if going dairy-free
  • 1 tsp sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 egg
  • For the glaze:
  • 1/3 cup tomato sauce
  • 2 1/2 tsp coconut sugar
  • 1 1/2 tsp dry mustard


  1. Preheat oven to 325 degrees.
  2. Place the ground beef, almond meal, parsley, parmesan, salt, pepper, and egg in a bowl. Combine very lightly with a fork.

  3. Transfer mixture to a 9-inch X 5-inch loaf pan.
  4. In a small mixing bowl, stir together the tomato sauce, dry mustard and coconut sugar for the glaze. Pour the glaze over meatloaf and spread evenly.

  5. Bake until meatloaf reaches 160 degrees on an instant read thermometer, about 45/50 minutes. Let rest 5 minutes before slicing.

  6. I've never needed to grease the pan or use parchment paper, but you can do so if you wish.
