Chocolate Chunk Paleo Cookies

These chocolate chunk paleo cookies are rich and loaded with chocolate and protein.

  • cup  creamy almond butter
  • 1/2  pure maple syrup
  • 2 tbsp. cocoa powder
  • 1/2 cup Bob’s Red Mill paleo baking flour
  • 1 tbsp coconut oil, melted and cooled
  • eggs
  • 1/2 cup dark chocolate morsels


  1. Preheat your oven to 350 degrees F and line a cookie sheet with parchment paper.

  2. In a large bowl, add the almond butter, cocoa powder, Bob’s Red Mill paleo baking flour, pure maple syrup, coconut oil, and eggs.

  3. Stir together until fully incorporated, then add in the dark chocolate chunks or chips, and fold into the batter.
  4. Now, scoop out about 2 tablespoons of the batter and transfer to the cookie sheet.
  5. Shape the dough into a cookie, using water to help keep it from sticking to your hands, as needed.
  6. Repeat with the remaining dough, leaving space in between the cookies on the baking sheet.

  7. Place the cookie sheet into the oven and bake for 8-10 minutes, or until the edges of the cookies just slightly start to turn brown.
  8. Remove from the oven and let sit for a couple minutes to set before moving to a cooling rack to cool completely.
