1largesweet potato,cooked and peeled (approx. 3 cups)
2clovesgarlic
3tablespoontahini
1 ½teaspoonsea salt
1tablespoonfreshly squeezed lemon juice
chopped parsley, paprika, and olive oil, for garnish
Instructions
Add all the ingredients (minus the garnish) to a food processor.
Blend until smooth.
To serve, top it with some fresh parsley, paprika, and a little sea salt. I love a little drizzle of olive oil over my hummus as well - it adds to the flavor and texture.
