Ingredients

  • 1 tbsp olive oil
  • 1 cup yellow onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups brown rice, rinsed (uncooked)
  • 1 1/2 cups dried black beans
  • 2 cups fresh tomatoes (approx 4 tomatoes), diced
  • 2 cups low sodium vegetable broth
  • 3 cups water
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper
  • optional topping: lime wedge

Instructions

  1. Rinse the black beans and remove any debris. Set aside.
  2. Press the Saute button on the Instant Pot and allow it to get hot, then add the olive oil. Add the diced yellow onions and saute until translucent. Then, add minced garlic and cook for a minute more, until fragrant.

  3. Add the cumin, chili powder, oregano, sea salt, cayenne, and stir.

  4. Add diced fresh tomatoes with juice, our rinsed black beans, and uncooked brown rice. Then, pour in low sodium vegetable broth and water, and stir to combine.

  5. Lock the Instant Pot lid in place and set the pressure release valve to "sealing". Cook on high pressure for 30 minutes. Then, allow the pressure to release naturally for 20 minutes before opening the lid.
