1tablespoonrice wine vinegar
1-2teaspoonsambal olek or sriracha or hot sauce of choice
2cloves garlic, minced

Herb | Marinade enough for about 4 chops (1 ½ to 2 lbs)
⅓cupolive oil
¼cupfinely chopped parsley
1tablespoonminced thyme
1tablespoonminced rosemary
1lemonzest, and juice
4clovesgarlic, minced
1teaspoonhot red pepper flakes (optional)
1teaspoonkosher salt
½teaspoonground black pepper
Instructions
Whisk together all ingredients of desired marinade in a small bowl. Place pork chops in a glass dish or bowl, or reusable ziploc bag. Coat in marinade.
Refrigerate and marinate for a minimum of 2 hours or up to 24 hours, turning occasionally.
Before cooking, remove excess marinade and season lightly with salt and pepper, as desired.
