Preheat oven to 425 F and line a rimmed baking sheet with parchment paper. Set aside.
Toss sweet potatoes and olive oil in a large bowl.
Combine seasonings in a small bowl.
Add spices to potatoes and toss to coat.
Arrange potatoes in one layer on baking sheet.
Bake in oven on lowest rack until undersides are browned, 15 minutes.
Flip potatoes with a spatula and bake 15 more minutes. For the Garlic & Herb Sweet Potato Fries, toss with parmesan and parsley after removing from oven. For Spicy Chile Sweet Potato Fries, toss with cilantro after removing from oven.
