Ingredients

very ripe bananas,
mashed

egg

teaspoon
vanilla extract
1 ½

whole wheat pastry flour

teaspoon
baking soda

teaspoon
ground cinnamon

sea salt

raw walnuts,
chopped

teaspoon
coconut oil,
for greasing loaf pan
Instructions
Preheat oven to 350 degrees F and line a 9x5 inch
loaf pan
with parchment paper, holding it steady with a little coconut oil, if needed.
In a medium
mixing bowl
, mash the bananas using a fork or potato masher.
Add the egg and vanilla and stir to combine. Set aside.
In a separate
mixing bowl
, combine the flour, cinnamon, baking soda, and sea salt. Mix well.
Add the dry ingredients to the wet ingredients and stir to combine. Do not over mix.
Fold in the walnuts.
Pour the mix into the prepared
loaf pan
.
Bake for 50-60 minutes, or until a toothpick inserted comes out clean and top is golden brown
