An easy and healthy summertime treat, these Spicy Pineapple Popsicles are only 4 ingredients and are sweetener free, dairy free, vegan, and paleo!

Today I'm making for you one of my favorite summertime treats - popsicles! Truthfully, I can eat popsicles all year round. When my boyfriend was living in Charlottesville, VA, we would go to the farmers market on Saturdays when I was visiting. There was a local vendor selling unique homemade popsicles that I loved. I remember one weekend being in a winter coach with gloves on my hands, but still enjoying my popsicle.
I'm also a lover of everything spicy, so these popsicles have a little kick to them. They are only made with 4 basic ingredients that you probably already have in your kitchen/pantry. I used lite coconut milk to keep them dairy free and on the lighter side. There is also some fresh lime juice to balance the sweetness and the spice comes from a bit of cayenne pepper! If you aren't a fan of spicy or are making these for the kids, feel free to leave it out.

Spicy Pineapple Popsicles

Ingredients
- 3.5 cups pineapple, cubed
- ½ cup lite coconut milk
- ¼ cup lime juice
- ¼ teaspoon cayenne pepper
Instructions
- Add all ingredients in the order listed to a high powered blender or food processor. Blend until smooth, about 1 minute.
- Pour the liquid into your popsicle mold. Place lid on mold and carefully insert sticks. Freeze for 3-5 hours until set.
- Enjoy!
