Ingredients For Lemon Roasted Asparagus

Asparagus: Look for firm, bright green stalks with tightly closed tips for the best flavor and texture. Love asparagus like I do? Try my Easy Pan-Fried Asparagus!
Olive Oil: Avocado oil works as a great alternative.
Lemon: A bright, zesty finish that balances the savory notes. Freshly squeezed lemon juice is ideal for the best flavor. Lemon adds such an amazing flavour, like in my Lemon-Herb Tilapia, the flavor is just incredible.
Garlic: Freshly minced is best, but garlic powder will work in a pinch.
Parmesan: What dish isn't better with parmesan? None. Just like this one, it's amazing and then gets even better with parmesan. That being said, you can swap for nutritional yeast if non-dairy.
Step By Step Instructions

- Step 1: Combine asparagus, olive oil, garlic, parmesan, lemon and seasonings onto a baking sheet.

- Step 2: Toss to coat evenly. Cook for 8 minutes at 400 degrees.

When it comes to picking asparagus for this recipe, there are several indicators you'll want to look for to ensure non-woody, crisp asparagus. Here are my tips for what to look for:
- Opt for thinner asparagus - the thickness indicates maturity and large, thick pieces could indicate the asparagus is overripe and woody
- Bright green, slightly purple spears are best
- Spears should be firm, not limp
- The bunch should slightly squeak when squeezed, not appear woody
- The tip of the spears should be closed and compact, not mushy or wet
Woody asparagus is the worst, but these tips will help ensure you've picked the freshest, crispest asparagus available.
This Lemon Roasted Asparagus stores well in an airtight container in the fridge for about 3-5 days. Reheat in a pan or the microwave for 30-60 seconds. (For more help with storing containers, check out my Ultimate Guide to Best Meal Prep Containers.)
Most of the fiber in asparagus is found from the crown downwards so you’ll want to discard the bottom-most part of the asparagus stalks where it’s the toughest and the hardest.
Simply bend each spear and it should naturally snap off close to the bottom.
Discard the woody ends at the bottom part and you’re all good! You can also slice them off with a knife if you want to be more precise.

Ingredients
- 1 lb fresh asparagus , trimmed
- 2 tablespoon olive oil
- 2 cloves garlic , minced
- 2 tablespoon parmesan , grated
- 1 lemon , thinly sliced
- 2 tablespoon freshly squeezed lemon juice (approx. 1 lemon)
- ½ teaspoon sea salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat your oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
- Add the asparagus, lemon slices, olive oil, freshly squeezed lemon juice, sea salt, ground black pepper, minced garlic, and parmesan cheese to the baking sheet.
- Toss to evenly coat.

We roasted ours at 525F in the oven while the bread was baking. Came out great. Pull them out when the tips just start to turn brown. Instructions should be modified because you don't "toss" asparagus and all ingredients after you've laid them out on the cookie sheet. We just laid out the asparagus flat, drizzled the oil and sprinkled the ingredients on top. If you want to more thoroughly coat them, put them in a plastic bag or a bowl and toss together before putting them on the cookie sheet. Delicious!! Highly recommended.
