Chia Seeds
Either black or white chia seeds work. I like to use white chia seeds here to make this pretty Strawberry Matcha Chia Pudding even prettier, but they can be used interchangeably.
Pure Maple Syrup
Add sweetness in a pure, unprocessed way with maple syrup. This recipe takes only 1 tablespoon. Other sweeteners can be raw honey or monk fruit, for example.
Pure Vanilla Extract
Give your matcha pudding a subtle boost of flavor with pure vanilla extract. It's just enough to enhance the flavor for an even more delicious taste.
Unsweetened Coconut Milk

Matcha

Look for bright red strawberries for optimum sweetness. I really love the combination of strawberries and matcha, but you can swap it with any fresh fruit for this recipe. You can also leave the fruit out entirely if you prefer.

Strawberry Matcha Chia Pudding can be kept in the fridge for up to 5 days. I store mine in a sealed mason jar for optimal freshness.
Occasionally, chia pudding can thicken to a consistency that you find too thick. Gradually stir in a teaspoon of coconut milk at a time to reach the consistency you like. If your chia pudding isn't thick enough, add a teaspoon of chia seeds at a time, let it sit for 10 minutes, and see if it's to your liking.

Strawberry Matcha Chia Pudding

Ingredients
- ¼ cup chia seeds
- 1 tablespoon pure maple syrup
- 1 teaspoon pure vanilla extract
- 1 cup unsweetened coconut milk
- 1 teaspoon matcha, plus more for stronger matcha flavor
- 3 strawberries, thinly sliced
Instructions
- Add the chia seeds, pure maple syrup, pure vanilla extract, and unsweetened coconut milk to a mixing bowl.
- Stir this all together and place in the fridge to set. It’s ready to go in just about 30 minutes, but you could leave it overnight if you want.
- Remove it from the fridge and stir it together. You can see the chia seeds have formed a gel and the mixture is thicker, more like a pudding.
- Add the matcha powder to the prepared vanilla chia pudding. Stir to combine until it’s completely mixed. Then, add a little of the matcha chia pudding to the bottom of a jar, approximately ¼ of the way up in the jar.
- Using thinly sliced strawberries, place them around the inner sides of the jar and then fill to the top with the remaining matcha chia pudding. To serve, add a couple strawberry slices.
